Peach Rhubarb

It all began with a cold call — and a couple of cold cans — back in 2022 when Le Seltzer
cofounder Noah Bick knocked on the door of Cheese Boutique HQ in Toronto. One sip and one handshake was all it took to launch what’s been a very fruitful partnership between the two brands. Cheese Boutique was our very first distributor in Ontario and it’s largely thanks to them that we’ve built our fanbase in Toronto and beyond.

Fast forward to 2025, and Le Seltzer got to chatting with Cheese Boutique co-owner, celebrated Cheese Master and cookbook author Afrim Pristine about new ways of working together. The conversation was brief: “Wanna make a seltzer flavour together? Let’s do it!”

After playing around in the lab, we landed on the most iconic of Ontario fruits, the peach. Few things are better than a sweet, fresh-off-the-tree Niagara peach, amirite? And then we paired it with another stellar ingredient, one of the first true signs of spring in Ontario and Quebec, rhubarb. It’s tart and tangy and it pairs amazingly well with almost any ripe summer fruit. Both flavours shine through in this stunningly refreshing midsummer mélange. We think it’s destined to become a summer classic!
